Ingredients
For the bolognese2 tbsp.extra-virgin olive oil
1large onion, chopped
1large carrot, peeled and finely chopped
2stalks celery, finely chopped
3cloves garlic, crushed
900 gminced beef
120 mldry white wine
4(400g) cans chopped tomatoes
55 gtomato paste
240 mllow-sodium beef (or chicken) stock
1bay leaf
240 mlmilk
salt
Freshly ground black pepper
For the lasagna450 glasagne sheets
750 gricotta
1large egg, beaten
100 gfreshly grated Parmesan
1 1/2 tsp.dried oregano
1/4 tsp.crushed chilli flakes
salt
Freshly ground black pepper
450 gfresh mozzarella, sliced
Freshly chopped parsley, for serving
Directions
Step 1In a large casserole dish over medium-high heat, heat oil. Add onion, carrot, and celery, and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Stir in beef breaking up meat with back of a spoon. Cook until no longer pink, about 8 minutes. Step 2Add wine, and bring mixture to a simmer. Cook until wine is mostly reduced. Stir in tomatoes, tomato paste, stock, and bay leaf, then reduce heat and simmer for 1 hour, allowing flavours to meld. Step 3Discard bay leaf, then gradually stir in milk. Let simmer, stirring occasionally, until milk is fully incorporated, about 45 minutes. Season with salt and pepper.Step 4Assemble lasagne: Preheat oven to 190°C (170ºC fan). In a large pot of boiling salted water, cook pasta according to package directions. Drain. Step 5In a medium bowl, combine ricotta, egg, 75g Parmesan, oregano, and chilli flakes. Season with salt and pepper. Step 6Add a thin layer of bolognese to the bottom of a 22 x 33 cm baking dish. Add a layer of pasta then top with ricotta mixture and sauce, then repeat layers. Top last layer of pasta with bolognese, mozzarella, and remaining Parmesan. Step 7Cover with foil and bake for 40 minutes, then remove foil and bake 20 minutes or until cheese is melty and sauce is bubbling.
